WIAW: Homemade Chipotle

Hi friends! Happy Wednesday. Surprised to see me three times this week already? I know me too. I’ve always been a quality over quantity kind of blogger, but with the holiday season in the air I’ve felt so much more talkative.

And I think I’m using any excuse to talk about Christmas ;)

Being Wednesday, it’s time for the usual WIAW thanks to Jenn over at Peas & Crayons! As always, thanks again for hosting this little party :)

Breakfast yesterday was SUPER healthy. Like the healthiest, most nutritious breakfast ever known to man. Lucky for you, I have a recipe for all you guys so you too can enjoy it as much as I did!

  • Serves: 1
  • Ingredients: 1 car, 1/2 tank of gas, and $5.00
  • Directions: Get in your car (and buckle up!). Drive to your nearest McDonalds. Order the #9 with no hashbrown and a large Diet Coke.

OH yeah, that’s the good stuff ;)

P.S. When I went to go look for a photo of the bacon egg and cheese bagel, it transferred me to this website. That can’t be good.

So yes, I indulged in an unhealthy guilty pleasure. Do I regret it? Not one bit. It was delicious. And filling. And I may or may not be dreaming about the next time I eat one.

For lunch I decided to keep things light. I topped my mixed greens with red peppers, cucumbers, 2 hard boiled eggs, and slices of chicken with a balsamic dressing.

I was craving Chipotle for dinner, but I made a promise to myself I would (try) to avoid eating it more than once a day ;) KIDDING. Instead I decided to throw together my own home made Chipotle burrito bowl. I tossed 1/2 cup of brown rice, one chicken breast, corn mixed with salsa, shredded lettuce, and a side of homemade guacamole altogether.

Let’s be honest, nothing beats Chipotle. But this was definitely a close second ;)

SO GOOD! This will definitely be on the menu for future meals.

Week 7 Recap

So I’m halfway done with Carrie’s Slim & Sculpt Workout Program. I’m going to be honest, I am NOT a fan of the added cardio in this phase. I’ve never been great at running, nor have I ever enjoyed heavy cardio. I do it because it’s what I need to do to get the results I want to get. But let me tell you, there were several times when I wanted to just quit and walk away. It was really hard to keep motivating myself to push through, but the feeling of accomplishing something that you didn’t think you could do is unbelievable. I did skip this week’s Sunday workout, but sometimes life just gets in the way!

In regards to changes to my body, I know I’m getting stronger and I’ve seen some definition in my arms and legs, but I want more. I think I need to up my weight amount to really push myself to take it to the next level to see the results I want. It’s easy to sit back and do the easy weights over and over again, but that won’t  show you anything. You have to have the mental toughness to keep pushing yourself physically.

Weekly WW Weigh-In: I’m happy with my weigh in this week. I’m up +2.5 pounds but still down -6.5 pounds total. The slight gain was expected as I didn’t eat as well as I could have this weekend, and I did enjoy a few beers for Jackie’s birthday. This week I just have to buckle down and keep an eye on what I’m intaking (and I’m sure that McDonalds breakfast bagel didn’t help ;)). Oh well, everyday is a new day!

December 12 – Wrapping paper of gift bags?

Oh, this one is easy. Wrapping paper ALL the way! There’s something so wonderful about having Christmas music playing in the background while you wrap presents bought for your family and friends. I love giving gifts, and put so much thought into each present I give. I truly want the recipient to love their gift! My sister and I always try to trick each other with the boxes we put our gifts to each other in. Last year I bought her a pair of boots she was dying for, but instead of leaving them in the box I purchased them in I put each boot into a different box and wrapped them separately. She had no idea, and the look on her face was priceless! :)

Well, I’m off for the day. I’m up and around earlier than usual because I have a doctor’s appointment at 8:00 AM this morning down at Tuft’s hospital. Hopefully it turns out to be nothing serious, but I’ll know more after today! FYI: Less than two weeks ’til Christmas – Happy Wednesday!!

    We all need to indulge here and there… You are no exception :)
    I’m all about the wrapping paper too… it’s way more fun to see people, especially kids, rip their present open!

      My family always balls up the wrapping paper and then tries to throw it at each other when the other person isn’t looking ;) we’re so nice.

    Positive vibes being sent your way, better late than never, for your doctor’s appointment. Was wondering why you were in a hospital gown!

    Glad you’re still happy with your WW weigh in this week even though you were up from the last time. Sometimes we get to focused on the week to week changes instead of looking at the big picture, like you did that you’re still down from where you started.
