Why Siesta When You Can Fiesta?

Last Friday, in honor of Cinco de Drinko Mayo, my company threw us our own little fiesta during our lunch break.

Anyone who wanted to participate in the cooking contest brought in different dish falling into one of the three categories: appetizers, entrees, and desserts. During lunch everyone in the office went around and tried a sample of all the dishes, and then voted on their favorite in each category!

I decided to try my hand at making my own guacamole dip. I had just recently tried guacamole from a restaurant called Not Your Average Joe’s for the very first time the week before. Yup. I had never tried guacamole in my 22 years until two weeks ago.

I had no idea what I was missing out on! Guacamole is awesome.

Quick & Easy Guacamole Dip

Ingredients:

  • 3 avocados
  • 1 red onion
  • 1 clove of garlic
  • Fat free salsa

Peel the avocados and remove the pits. Put avocados in a large bowl and begin mashing them. Peel and chop the onion and garlic and add to the bowl.

I wanted to leave chunks of avocado in the dip rather than make it smooth and creamy. Instead of adding a tomato, I added 1/2 a jar of salsa (more or less depending on your preference) to add more flavor. Mix together and voila! you have guacamole dip!

Since I had only tried guacamole on that one occasion, I had my roommate taste test my dip. I thought it was pretty good, but lacking the kick that the guac dip from Not Your Average Joe’s had. My roommate couldn’t get enough! Hey, to each his own.

My dip didn’t end up winning in the “appetizer” category, but the bowl was clean when I went to get it. I guess that means someone enjoyed it ;)

My favorite appetizer was a cream cheese dip with tomatoes, peppers, shredded lettuce and melted cheese. It was amazing, and definitely kicked my guac dip’s ass.

The entree’s were all delicious, but my favorite overall dish was actually a dessert. It was three crackers together sprinkled with cinnamon and a chocolate/vanilla mouse in the middle.

YUM.

It was a great start to an extremely fun and crazy Cinco de Mayo weekend :)

    Cinco de Drinko. HAHA. I legit can’t stop laughing. Glad it was a good time though and you look supa cute!
